The heart of this experience is the resort’s Binh Minh Restaurant, where guests can dine indoors or al fresco, with a menu that spans Vietnamese classics and Mediterranean flavours. The standouts, though, are the platters. The Seafood Platter is piled high with prawns, squid, octopus, oysters, clams and blue mussels – all bought fresh that morning moments after the fishermen haul in their nets along the beach.
Guests can even stroll down to the beach to watch the boats return and the fresh catch being brought ashore, knowing that just hours later it will be served at their table.
A feast of local flavours…
Equally enticing is the Local Platter, a culinary journey through Vietnam’s most beloved flavours. Sizzling pancakes, marinated pork skewers, fragrant spring rolls, shrimp on sugarcane and a medley of herbs and noodles – all accompanied by a rich peanut sauce. Many of the herbs, vegetables and fruits are picked fresh from the resort’s own organic herb garden, where basil, mint, lemongrass and more thrive.
The village connection…
More vegetables come from the famous Tra Que Village, a community just outside Hoi An that has been perfecting organic farming for nearly 400 years. Using natural seaweed from the Co Co River as fertiliser, the farmers cultivate over 20 types of fragrant herbs and leafy greens. Guests can even visit the village, roll up their sleeves and work alongside the farmers learning the traditional methods that make Tra Que’s produce so special.
